RECIPE
Step 1 – Drain any fluid from the meat by placing the duck in a plastic container lined with paper towels. Set aside and let it do its thing for about an hour in the fridge.
Step 2 – Make the marinade by combining soy sauce, ginger powder, minced garlic, honey, and green onions. Feel free to eyeball this part. Marinate the duck in the fridge for about 20-30 min.
Step 3 – Slowly pre-heat your cast iron to high. Drizzle some olive oil in the pan and add the duck so it cooks hot and fast until it is rare to medium rare.
Step 4 – Dust the pieces of duck lightly with Camp Chef Citrus Herb seasoning and flip. Once done, pull them off and let them rest for about 5 minutes.
Step 5 – Add some butter and a couple of eggs to the cast iron, give ‘em a rough scramble.
Step 6 – Cook the rice by following the directions on the package. While it’s cooking, chop your duck breast into small pieces.
Step 7 – Throw the rice into the cast iron pan and incorporate the eggs. Drizzle in a bit of soy sauce. Add in chopped green onion and cooked duck.
Step 8 – Place in a bowl and drizzle with sesame seeds, eel sauce, and yum yum sauce or spicy mayo.
